Wine production

Wine is the beverage that reflects growing conditions (soil character, solar intensity, precipitations). The wine character is obtained by winemaker’s skills. He ought to choose right varieties, sites and winemaking technologies that form wine individuality. Wine has to be of high quality and diverse character.

At the end of winter the vine has a rest, and winemaker has not. He takes care of his wine, observes the weather changes and control whether winter frosts destroyed the vines. Right after New Year he commences vine pruning that has to be completed before the spring.  

When the spring comes the sap begins to flow and the buds engorge. Vine grows abundantly in May, rapidly develops the shoots, leaves and clusters. In this period stable weather without rains is of great importance. This is the very time when the next yield is forming. Young wines gain finesse of aroma and flavor, and the winemaker has time to evaluate the results of his work.

During summer and autumn the bunches gradually ripen. At this time the nature begins to asses the work of a vinegrower and weather conditions by severe correction of sugar content and aromatic composition in bunches that are of great importance for future wine.

As a rule in the second half of September and in November the vinegrowers are very busy because it is harvest time. Vinselekt company uses dry ice to protect bunches from oxidation and preserve aroma compounds till processing time.

Wine production begins with the berry detachment from the stem. At this very moment one has to choose winemaking technology. During white winemaking grape must is being fermented, while during red winemaking fermentation goes with pomace (must, skins and seeds), the pressing is performed after fermentation. Before fermentation active dry yeasts are being added, the wine is run off in the stainless steel vats where it gains its specific character.

One cannot see fermentation, vinification and storage processes of wine but they show winemaker’s skills. He has to combine his knowledge, experience and intuition in order to obtain high quality wine. Wine maturation before running off takes about 3-5 months in Vinselekt company.

The tanks are another important factor of wine production. The stainless steel vats are the most commonly used; meanwhile aging is performed in oak barrels especially in case of red wines. During aging in barrels wine gains special aromas, mild tannins and rich structure.

Finished wine is bottled using modern bottling line. Only the best wines are bottled. Before sale wine is aged in bottles. Bottled wine is being stored in cellar with temperature control where maximum deviation is about 0,5˚C, there wine is stored for half a year or several years.
